Cocoa – A timeless flavor with a future

ALCAO sources most of its cocoa beans from Côte d'Ivoire and Ghana – two of the world's leading growing regions. Each harvest is carefully checked for ripeness, fermentation, and drying to guarantee the highest quality.

Cocoa mass

ALCAO's main product is cocoa mass. The product is obtained by roasting and grinding cocoa beans and is an important ingredient for coatings on various desserts and confectionery. 

Cocoa mass is available in both natural and alkalized form and can be processed in liquid or solid form. Alkalization changes the specific color and flavor profile, making it ideal for individual recipes.

Cocoa powder 

ALCAO offers cocoa powder in natural and alkalized form with a cocoa butter content of 10–12% or 20–22%. 

 

Natural cocoa powder has a more acidic taste and a lighter color than alkalized cocoa powder. 

Alkalized cocoa powder is additionally treated with an alkaline solution to neutralize the acidity. This reduces the acidity and darkens the color.

 

There are different variants: 

  • Alkalized cocoa powder S2 (red-brown)
  • Alkalized cocoa powder S8 (medium brown)
  • Alkalized cocoa powder S9 (dark brown)
  • Alkalized cocoa powder S12 (black)

 

Cocoa butter

It is extracted from cocoa beans and can be used, for example, in the production of chocolate. 

Cocoa butter natural has the characteristic mild cocoa aroma and taste. 

 

For applications requiring a neutral aroma, ALCAO offers the deodorized quality cocoa butter DEO – which has been stripped of odors using pure steam.
