CareStarch: the versatile benefits and uses of tapioca starch

CareStarch is a product line from Nordmann's partner Caremoli, a leading provider of functional ingredients and mixtures. This product line includes both native and modified tapioca starches that meet the functional requirements of modern food products.

Tapioca starch is derived from the roots of the cassava plant and is a white powder known for its versatile properties. It is gluten-free and is widely used as a thickening and stabilizing agent in various foods. It is also known to improve the texture of food.

  • Forms a soft and creamy texture
  • Low gelatinization temperature (62°C)
  • Low hot viscosity

Caremoli, under the brand name CareStarch, offers not only native tapioca starch but also various modified tapioca starches: 

 

  • E1413: resistant starch. Insoluble fiber for low-carb or gluten-free diets.
  • E1422: thickening, stabilizing and gelling agent. Very tolerant to intensive processes.
  • E1442: thickening, stabilizing and gelling agent. Also suitable for low pH values and frozen           products.

 

Native and modified tapioca starches have a wide range of applications:

 

  • Gluten-free baked goods (bread, cakes, biscuits)
  • Dairy products (yoghurt preparations, desserts)
  • Soups, sauces, dressings
  • Confectionery
