News update from the Nordmann Food & Health Lab
Maria, what is your latest recipe in the health care sector?
Maria Wrogemann: The Calming Down Capsule, with Phytorelief, vitamins, and lemon balm. “It gently calms you down” – exactly when you need it. Phytorelief X-TRM by Layn has been proven to support stress reduction, promote relaxation, and help restore emotional balance thanks to natural ingredients such as L-theanine and magnolia. The effect is complemented by lemon balm, which is traditionally used for inner restlessness and sleep problems, as well as a vitamin B complex that supports energy metabolism and mental performance.

That sounds promising. What formulations are currently “in” in the food sector?
Maria Wrogemann: Our new “Vegan Hot Sauce”: plant-based, spicy, and innovative. It combines culinary heat with functional benefits – perfect for anyone who values taste, texture, and stability.
The focus is on Ovaprox® 10, a pioneering egg alternative from our partner Ulrick & Short. The combination of tapioca starch and pea protein replaces egg 100%. With a reduced oil content of only 50%, Ovaprox® 10 is also ideal for calorie-conscious recipes. Furthermore, the raw material ensures reliable binding power in meat and vegan meat substitutes. Ovaprox® 10 is therefore frequently used in vegan sauces, mayonnaise, and dressings, as well as in sausage and sausage substitutes.
Two aromatic highlights from our partner Ohly provide the sauce with its typical flavor kick: “Louisiana Hot Sauce” and “Jalapeños” powders add spice and a pleasant heat – easy to dose and versatile in use. The profile is rounded off by selected color components that give the sauce an appetizing and distinctive appearance.
The formulations mentioned refer to various trends in the industry. Can you give us more insight into the trends in the health care and food industry?
Maria Wrogemann: The healthcare industry is currently undergoing a transformation—away from purely treating symptoms and toward a holistic approach to prevention and quality of life. Topics such as healthy sleep, longevity through cell health, liver health, and targeted products for women's health (from hormonal balance to menopause support) are becoming increasingly important. At the same time, the food industry is also adapting to the growing demand for conscious consumption with innovative plant-based alternatives and egg substitutes, clear clean label concepts, and a consistent focus on sustainability throughout the entire value chain.
