VISCOGUM is a food additive used as a texturizing agent, for thickening and stabilization and as a water-binding agent. In combination with gelling carrageenan, VISCOGUM increases the gel strength of carrageenan. VISCOGUM is particularly useful as a thickening agent in many food applications.
Usage rates are in the range of 0.30 to 1%. Examples of applications: Ice cream, meat, baked goods and dairy products.
