Lactase for the production of hydrolyzed milk and milk products at a pH value of > 5.5 and with an enzymatic activity of ≥7500 LHU/g. The enzyme was produced using self-cloning yeast cells. The enzyme itself is non-GMO, but genetically modified cells were used in the production process, so although the material has VLOG, it may not be used in organic products.
